Pea casserole

Ingredients——

2 cans of peas (drained)—-you can also substitute broccoli and have broccoli casserole

1 cup mayo

1 can cream of mushroom soup

1 cup of grated cheddar cheese

2 eggs—lightly beaten

1 1/2 cups of crushed Ritz crackers

1 tbsp—melted butter

Cooking directions:

Preheat oven to 350 degrees

Spray a large baking dish (13x9)

Put all of the ingredients in a large bowl –peas, mayo, cheese, soup, half sleeve of Ritz crackers and eggs. Mix well then pour mixture in greased dish.  Finish off with a ½ sleeve of Ritz crackers on top and add butter.

Bake for 45 minutes or until top is golden brown
