ingredients:
1/2 cup chopped celery, 1 1/2 teaspoon chopped onion, 1 tablespoon each,red/green bell peppers diced,2 tablespoons chopped pimento,2 tablespoon cup flour, 1 1/2 cups chicken broth, 1/2 cup milk or cream, 1 1/2-2 cups diced/shredded chicken/turkey, salt/pepper to taste

cooking instructions:
In large fry-pan, saute celery, onion, peppers in fat until tender.  Blend flour into mixture.  Stir in broth and milk, cook and stir constantly until the sauce is smooth.  Add chicken and pimento…heat thoroughy, add salt/pepper to taste.  Serve while hot, over rice, toasted bungs, or biscuits.  4 servings.  Greatest way to use left-over chicken/turkey…except making chicken or turkey salad!!!
